Il Cellarius è composto dalle uve di Pinot Nero, Pinot Bianco e Chardonnay. La vinificazione speciale è la cura posta sull’interpretazione dei criteri del metodo tradizionale: 36 mesi di maturazione sulle fecce di lievito per ottenere un Brut davvero unico.
Le caratteristiche principali sono un eccezionale mix di uve in cui il Pinot Nero dell’area dell’Oltrepò fornisce corpo e trucco e garantisce una lunga conservazione. Il Pinot Bianco e lo Chardonnay della Franciacorta conferiscono una fragranza ricca e intensa, mentre il Pinot Bianco e lo Chardonnay dell’Alto Adige e del Trentino aggiungono un chiaro tocco acidulo fruttato, che conferisce al vino un sapore tipicamente fresco. Cellarius è un Brut caratterizzato da un perlage persistente molto fine. Di colore giallo paglierino e profumo intenso, una perfetta armonia tra la fragranza originale dell’uva e il nobile profumo della fermentazione. Ha un gusto morbido corposo, arricchito da un piacevole tocco acido.
