Lunga è la strada prima che le uve diventino un Franciacorta.
I grappoli di Chardonnay e Pinot Nero, raccolti a mano e sistemati in cassette da 20 chilogrammi, arrivano al centro di spremitura dove, divisi per lotti omogenei in base a varietà, a vigneto e caratteristiche analitiche, sono collocati in presse a piatto inclinato dove avviene la spremitura delicata e progressiva.
I mosti, limpidi e fragranti, sono frazionati in quattro selezioni e dopo la decantazione a freddo svolgono la fermentazione alcolica in tini d’acciaio inox o in barrique di rovere.
A gennaio dell’anno seguente lo staff tecnico inizia le prove di assemblaggio: una vera impresa, che coinvolge oltre 150 basi Franciacorta.
Dopo il tiraggio, le bottiglie sono accatastate nelle cantine storiche, custodite per il tempo della rifermentazione e della successiva maturazione sui lieviti, da 18 mesi fino a 10 anni.
Al remuage e alla sboccatura segue un ulteriore affinamento, e la bottiglia è finalmente pronta per la degustazione.

The road is long before the grapes become a Franciacorta.
The bunches of Chardonnay and Pinot Noir, handpicked and arranged in 20 kg crates, arrive at the pressing center where, divided into homogeneous lots according to variety, vineyard and analytical characteristics, they are placed in inclined plate presses where it takes place gentle and progressive pressing.
The musts, clear and fragrant, are divided into four selections and after cold decanting they carry out alcoholic fermentation in stainless steel tanks or in oak barriques.
In January of the following year, the technical staff began the assembly tests: a real undertaking, involving over 150 Franciacorta bases.
 After the draw, the bottles are stacked in the historic cellars, kept for the time of refermentation and subsequent maturation on the lees, from 18 months up to 10 years.
 Remuage and disgorgement are followed by further refinement, and the bottle is finally ready for tasting.
